Chunky Burdock and Chicken Miso Soup

Enjoy the chewy texture of chunky burdock in this miso soup.

Ingredients (4 servings)

Burdock 1/2
Chicken 120 g
Mitsuba (Japanese honeywort) 4 stalks
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Wash and scrub well the burdock and cut to 2-cm length. Cut the chicken into proper sizes. Separate the leaves from the mitsuba and cut the stalks to 3 ~ 4-cm length.
  2. Boil the chicken and burdock in the dashi stock until tender.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls with the mitsuba on top.
