Western-Style Mushroom Miso Soup

Western-Style Mushroom Miso Soup

With white mushrooms, brown mushrooms and mixed beans, this miso soup contains plenty of fiber.

Ingredients (4 servings)

White mushrooms 4
Brown mushrooms 4
Mixed beans 120 g
Kinusaya (Green snow peas) 2 pods
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Remove dirt from the white and brown mushrooms and slice them. Drain the mixed beans. Boil the kinusaya and cut diagonally into thin strips.
  2. Bring the dashi stock to a boil and add the white and brown mushrooms and mixed beans to cook.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls with the kinusaya sprinkled.

★ A Note
Mushrooms contain a lot of umami (good taste) and add good dashi to miso soup.
