Cold Pumpkin Miso Soup

This miso soup looks exactly like pumpkin soup. You will be surprised to eat it.

Ingredients (4 servings)

Small pumpkin 1/4
Onion 1/2
Dashi stock 800 cc
Miso 3-1/2 tablespoons
<Toppings>
 Dried parsley
 Whipping cream

A dash
A dash

Directions

  1. Remove the pumpkin seeds and pulp. Peel the pumpkin and cut into a little smaller pieces. Slice the onion.
  2. Boil the dashi stock with the pumpkin and onion. After the ingredients become tender, dissolve the miso and mix the soup in a blender.
  3. Cool the soup in a refrigerator and serve it in bowls with the whipped cream and parsley on top.

Sweet pumpkin and miso bring out the best from each other.
