Minestrone Miso Soup

Ingredients (4 servings)

Zucchini 1/2
Cabbage leaves 2
Yellow bell pepper 1/2
Celery 1/4
Miniature tomatoes 4
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Quarter-slice the zucchini into pieces. Cut the cabbage leaves into a little smaller pieces and yellow bell pepper into squares. Slice the celery. Also slice the miniature tomatoes and remove the seeds.
  2. Boil the dashi stock with the zucchini, cabbage, yellow bell pepper and celery. After the ingredients are cooked, lower the heat and dissolve the miso.
  3. Add the miniature tomatoes and boil for a moment. Serve the miso soup in bowls.

All the ingredients are summer vegetables in season and good for your health in summer.
