Soft-boiled Egg and Watercress Miso Soup

Enjoy a creamy and savory soft-boiled egg (onsen-tamago) and pungent watercress in this miso soup.

Ingredients (4 servings)

Onsen-tamago (available on the market) 4
Watercress 4 stalks
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Cut the watercress into halves.
  2. Bring the dashi stock to a boil and dissolve the miso. Add the onsen-tamago and watercress and boil for a short time.
  3. Serve the miso soup in bowls.

★ A Note
Onsen-tamago can be used for various dishes, adding richness to them, for example, on top of ordinary salad.
