Leopard Plant and Deep-fried Garlic Miso Soup

Enjoy the tender taste of leopard plant (tsuwabuki), similar but different from Japanese butterbur.

Ingredients (4 servings)

Tsuwabuki 120 g
Garlic 12 cloves
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Peel the tsuwabuki, boil and cut to 4 ~ 5-cm length. Deep-fry the garlic in vegetable oil at 180 °C.
  2. Bring the dashi stock to a boil. Add the tsuwabuki and deep-fried garlic and boil for a moment.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls.

★ A Note
With fluffy garlic and flavorous tsuwabuki, you can enjoy this miso soup only in spring.
