Samgyetang-style Miso Soup

This is a Korean-style miso soup with crumbly simmered chicken wings and a slight ginger flavor.

Ingredients (4 servings)

Chicken wings 4
Ginger 15 g
Mitsuba (Japanese honeywort) 4 stalks
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Mince the ginger and cut the mitsuba to 3 ~ 4-cm length.
  2. Boil the chicken wings and ginger in the dashi stock and simmer until cooked. Add the mitsuba and boil for a moment.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls.

★ A Note
Wing sticks also give a good dashi. Adding garlic and nutmeg makes the miso soup more like the original Korean stew.
