Daikon Radish and Chicken Red Miso Soup

Daikon radish in winter is very savory. Its taste is enhanced by red miso.

Ingredients (4 servings)

Daikon radish 1/4
Chicken 80 g
Kaiwaredaikon
(White radish sprouts)
Several sprouts
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Shred the daikon radish into thin rectangles and cut the chicken into proper sizes.
  2. Bring the dashi stock to a boil and add the daikon and chicken. After the ingredients are cooked, dissolve the miso and boil for a moment.
  3. Serve the miso soup in bowls with the kaiwaredaikon on top.

Daikon miso soup is superb in a frosty morning.
