Hakata Miso Soup

This is a simple but savory miso soup inspired by mizutaki, a famous stew in Hakata, Kyushu.

Ingredients (4 servings)

Chicken thigh 100 g (boneless)
Mitsuba (Japanese honeywort) 1 bunch
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Cut the chicken thigh into proper sizes and the mitsuba to 4 ~ 5-cm length.
  2. Bring the dashi stock to a boil and add the chicken thigh. After the chicken thigh is cooked, dissolve the miso and boil for a moment.
  3. Serve the miso soup in bowls with the mitsuba fully on top.

★ A Note
Chicken thigh is full of umami (good taste) and makes this miso soup savory. Mitsuba adds a distinctive flavor to it.
