Rock Laver and Water Shield Red Miso Soup

The smooth texture of water shield (junsai) and the sea flavor of rock laver (iwanori) are refreshing.

Ingredients (4 servings)

Dried iwanori 4 g
Junsai 1 bottle
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Wash the junsai quickly with water and drain.
  2. Bring the dashi stock to a boil, dissolve the miso and add the iwanori and junsai.
  3. Serve the miso soup in bowls.

★ A Note
Junsai in miso soup is covered with a jelly-like coating and has a characteristic chewy texture.
