Adzuki-Bean Rice Cake White Miso Soup

Adzuki mochi is a rice cake with sweet adzuki bean paste. The combination of sweet and flavorful seared adzuki mochi and salty miso soup is very appetizing.

Ingredients (4 servings)

Adzuki mochi 4 cakes (30 g/cake)
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Sear the adzuki mochi.
  2. Bring the dashi stock to a boil. Lower the heat, dissolve the miso and add the adzuki mochi.
  3. Serve the miso soup in bowls.

The key to this tasty miso soup is to use only adzuki mochi and miso and nothing else.
