Sea Lettuce and Daikon Radish Miso Soup

This miso soup with a strong sea flavor of sea lettuce (aosa) will make you miss the past summer.

Ingredients (4 servings)

Aosa 4 g (dried)
Mitsuba (Japanese honeywort) 4 stalks
Daikon radish 4 cm
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Rehydrate the aosa in water and drain. Separate the leaves from the mitsuba and cut the stalks to 3 ~ 4-cm length. Cut the daikon radish into rectangles.
  2. Boil the daikon in the dashi stock until tender. Lower the heat and dissolve the miso.
  3. Serve the miso soup in bowls with the aosa and mitsuba on top.

★ A Note

Aosa can easily be rehydrated in water. It is full of dietary fiber.
