Broiled American Eggplant and Bonito Flakes Miso Soup

American eggplant is firm-textured but becomes very tender when heated. Enjoy it with ginger in this miso soup for autumn.

Ingredients (4 servings)

American eggplant 1
Ginger 1 piece (15 g)
Bonito flakes 2 g
Dashi stock 800 cc
Miso 3-1/2 tablespoons

  1. Cut the American eggplant into 1-cm round slices and broil them. Grate the ginger.
  2. Bring the dashi stock to a boil and dissolve the miso.
  3. Place the eggplant in bowls and pour the miso soup of 2. Serve the miso soup in bowls with the grated ginger and bonito flakes gently on top.
