Kintoki Sweet Potato and Flat Fish Cake Miso Soup

Children love sweet kintoki sweet potato (kintoki-imo) and fluffy flat fish cake (hanpen) in this miso soup.

Ingredients (4 servings)

Kintoki-imo 1
Hanpen 1/2 piece
Turnip leaves A few stalks
Dashi stock 800 cc
Miso 3-1/2 tablespoons

  1. Cut the kintoki-imo into 1-cm round slices and the hanpen into triangular pieces in proper size. Chop the turnip leaves.
  2. Boil the kintoki-imo in the dashi stock until tender. Add the hanpen to cook.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls with the turnip leaves sprinkled.

★ A Note

The taste of kintoki-imo differs between soon after digging out and after being stored for some time. You can try the difference in taste.
