Giant Timber Bamboo Shoot and Abalone Mushroom Miso Soup

Giant timber bamboo shoots (ryokuchiku) used in this miso soup are tender and sweet.

Ingredients (4 servings)

Boiled ryokuchiku 80 g
Awabitake mushrooms (Abalone mushrooms) 2
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Cut the ryokuchiku into propose sizes. Remove dirt from the awabitake mushrooms and tear into pieces.
  2. Bring the dashi stock to a boil and add the ryokuchiku and awabitake to cook.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls.

★ A Note

The name of awabitake mushroom comes from its texture similar to awabi, or abalone. Enjoy eating this miso soup while imagining abalones.
