Sarasa-jiru a light-taste miso soup using tubular fish cake (chikuwa) and white miso.

Ingredients (4 servings)

Chikuwa 2 (30 g)
Tofu 1/3 cake
(Garland chrysanthemum)
2 stalks
Dashi stock 800 cc
Miso 3-1/2 tablespoons

  1. Cut the chikuwa into 1-cm rings and the tofu into 1-cm cubes. Cut the shungiku to 3-cm length.
  2. Bring the dashi stock to a boil, add the ingredients and boil for a short time.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls.

Sarasa-jiru is one the special dishes for the Okunchi festival in Nagasaki.
