Miso Soup of the Moon

Half-moon taro and a full-moon egg. Enjoy eating moons in this miso soup.

Ingredients (4 servings)

Taros 2
Chestnuts 4
Eggs 4
Decorative nori (dried laver) 8 pieces
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Peel the taros and cut into slightly thick semicircular slices. Peel the chestnuts, cut into proper sizes and boil.
  2. Boil the taros in the dashi stock until tender. Lower the heat and dissolve the miso. Crack the eggs into the miso soup and boil until they harden to your taste.
  3. Serve the miso soup in bowls with the chestnuts and nori cut into decorative shapes on top.

★ A Note

Avoid boiling the miso soup after adding eggs. Otherwise, the miso soup becomes cloudy.
