Chicken Wing and Daikon Radish Miso Soup

The rich umami (good taste) of chicken wings encloses daikon radish in this miso soup.

Ingredients (4 servings)

Chicken wings 8
Vegetable oil 1 teaspoon
Daikon radish 4 cm
Ichimi-togarashi (Cayenne pepper powder) A dash
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Kome (Rice) miso

Directions

  1. Stir-fry the chicken wings both sides with the vegetable oil. Peel the daikon radish and cut into slightly thicker quarter slices.
  2. Boil the ingredients of 1 in the dashi stock.
  3. After the ingredients are cooked, lower the heat and dissolve the miso. Serve the miso soup in bowls with the ichimi-tograshi sprinkled to taste.

Soup seeping from chicken with bones is exceptionally delicious.
