Bacon Miso Soup

Bacon softens the bitterness of
bitter gourd (goya) in this miso soup.

Ingredients (4 servings)

Goya 1/2
Bacon 2 pieces
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Slice the goya into 1-cm pieces and remove the seeds and pulp from them. Cut the bacon into pieces of 1.5-cm width.
  2. Boil the goya and bacon in the dashi stock until the goya becomes tender.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls.

★ A Note

Although the bitterness of goya is enjoyable, you can reduce it by rubbing the sliced goya pieces with salt.
