Sweet Pepper and Dried Baby Sardine Miso Soup

Enjoy refreshing thick sweet peppers (ama-togarashi) with savory dried baby sardines (chirimenjako) in this miso soup.

Ingredients (4 servings)

Ama-togarashi 4
Chirimenjako 4 tablespoons
Dashi stock 800 cc
Miso 3-1/2 tablespoons

  1. Grill the ama-togarashi lightly and cut into halves.
  2. Bring the dashi stock to a boil, add the ama-togarashi and chirimenjako and boil for a moment.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls.

Lightly grilling ama-togarashi increases its umami (good taste) and makes the miso soup fragrant and tasty.
