Pureed Winter Melon Miso Soup

Although winter melon (togan) has a light taste, grated togan gently wraps around ground chicken, making this miso soup mild.

Ingredients (4 servings)

Togan 200 g
Ground chicken 40 g
Potato starch with water 2 tablespoons
Banno-negi (Thin green onion) 1 stalk
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Remove the seeds and pulp from the togan, peel it a little thickly and grate it. Chop the banno-negi.
  2. Bring the dashi stock to a boil and add the ground chicken. Boil the chicken while skimming the scum off the top and add the togan.
  3. Dissolve the miso and thicken the soup with the potato starch with water. Serve the miso soup with the banno-negi sprinkled.

★ A Note

Although winter melon has “winter” in its name, it is a summer vegetable. You can cook it with tasty dashi stock for various dishes.
