								Pureed Winter Melon Miso Soup
								Although winter melon (togan) has a light taste, grated togan gently wraps around ground chicken, making this miso soup mild.

											| Togan | 200 g | 
										
											| Ground chicken | 40 g | 
										
											| Potato starch with water | 2 tablespoons | 
										
											| Banno-negi (Thin green onion) | 1 stalk | 
										
											| Dashi stock | 800 cc | 
										
											| Miso | 3-1/2 tablespoons |

								Directions
								
									- Remove the seeds and pulp from the togan, peel it a little thickly and grate it.  Chop the banno-negi.
- Bring the dashi stock to a boil and add the ground chicken. Boil the chicken while skimming the scum off the top and add the togan.
- Dissolve the miso and thicken the soup with the potato starch with water. Serve the miso soup with the banno-negi sprinkled.

										Although winter melon has “winter” in its name, it is a summer vegetable. You can cook it with tasty dashi stock for various dishes.
