Red Onion and Mulukhiya Miso Soup

This miso soup is an easy way to enjoy mulukhiya, the king of summer vegetables.

Ingredients (4 servings)

Red onion 1/2
Mulukhiya 1/2 bunch
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Pick the mulukhiya leaves and scald them. Slice the red onion.
  2. Boil the dashi stock with the red onion. After the onion becomes tender, lower the heat and dissolve the miso.
  3. Add the mulukhiya and boil for a moment. Serve the miso soup in bowls.
