Green Soybean Miso Soup with Soymilk

The flavor and taste of green soybeans (edamame) can be enjoyed best only in summer. Enjoy edamame fully with this miso soup.

Ingredients (4 servings)

Edamame (in pods) 120 g (for mashing)
Salt 1 teaspoon
Edamame 20 beans
Soymilk 200 cc
Dashi stock 600 cc
Miso 4 tablespoons

Directions

  1. Boil the edamame for mashing in water with the salt and take the beans out. Mash the edamame beans in a mortar.
  2. Bring the dashi stock to a boil and dissolve the miso. Add the soymilk.
  3. Place the mashed edamame in bowls and pour in the soup of 2. Serve the miso soup in bowls with the edamame beans on top.

★ A Note

Both miso and soymilk are made from soybeans. They should match perfectly with edamame.
