Scallop and Sweet Corn Miso Soup

Sweet corn in season in this miso soup is almost addictive.

Ingredients (4 servings)

Fresh scallops 8
Sweet corn 4 tablespoons
Minced parsley 1 teaspoon
Dashi stock 800 cc
Miso 3-1/2 tablespoons

  1. Bring the dashi stock to a boil and add the sweet corn and scallops.
  2. After the ingredients are cooked, lower the heat and dissolve the miso.
  3. Serve the miso soup in bowls with the minced parsley sprinkled.
