Buckwheat Dumpling Miso Soup

Buckwheat dumplings (sobagaki) have a simple taste. Enjoy them with this miso soup.

Ingredients (4 servings)

Sobagaki
Soba (Buckwheat) powder 160 g
Hot water 250 cc
Sobanome (Buckwheat sprouts) Several stalks
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Add the hot water in the soba powder and mix and knead well. Make dumplings (sobagaki) from the soba dough.
  2. Boil the sobagaki in the dashi stock for 1 ~ 2 minutes. Add the soba sprouts and boil lightly.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls.

★ A Note

Adding mushrooms, such as maitake mushrooms, makes this miso soup tastier.
