Asparagus and Kochia Seed Miso Soup

The popping texture of kochia seeds (tonburi or field caviar) makes you addictive.

Ingredients (4 servings)

Tofu 1/2 cake
Miniature asparagus 6 spears
Tonburi 4 teaspoons
Dashi stock 800 cc
Miso 3-1/2 tablespoons

  1. Slice the miniature asparagus diagonally.
  2. Bring the dashi stock to a boil and add the miniature asparagus. Add also tofu in scoops with a spoon and cook.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls with the tonburi on top.

★ A Note

Tonburi, often called field caviar, goes well with miniature asparagus.
