Green Beans, Potato and Watermelon Radish Miso Soup

With vivid watermelon radish (koshin daikon), this miso soup let you enjoy the taste of spring.

Green beans 4 pods
Potato 1
Koshin daikon 1 slice
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Slice the potato thinly, cut the green beans diagonally to 2 ~ 3-cm length and shred the koshin daikon.
  2. Boil the potato and green beans in the dashi stock until tender. Lower the heat and dissolve the miso.
  3. Serve the miso soup in bowls with the shredded koshin daikon on top.

★ A Note

In the season of cherry-blossom viewing, you can cut koshin daikon into the shape of cherry flower with a cookie cutter.
