Taro and Mushrooms Sesame Miso Soup

Taro is sweet and tasty in winter. Enjoy it together with plenty of mushrooms with sesame flavor.

Ingredients (4 servings)

Taros 2
Shimeji mushroom 1/2 pack
Eryngii mushrooms 2
Mizuna (Potherb mustard) A few leaves
Ground sesame 3 tablespoons
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Peel the taros and cut into quarter slices. Cut the base off the shimeji mushroom and separate into smaller bunches. Slice the Eryngii mushrooms.
  2. Bring the dashi stock to a boil and add the taros, shimeji and eryngii. After the ingredients are cooked, dissolve the miso and boil for a moment.
  3. Serve the miso soup in bowls with the mizuna on top and the ground sesame sprinkled.

With the flavor of sesame, taro miso soup becomes tastier.
