Okra and Grated Yam Miso Soup

Both okra and grated yam are gooey and full of nutrition. This miso soup is good for fatigue in summer.

Ingredients (4 servings)

Okra 4 pods
Yam 200 g
Aosa (Sea lettuce) 1 teaspoon
Sobanome
(Buckwheat sprouts)
A few
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Kome (Rice) miso

Directions

  1. Boil the okra in salt water and cut into round slices. Peel and grate the yam.
  2. Bring the dashi stock to a boil. Dissolve the miso and boil for a moment.
  3. Place the yam in bowls and pour the miso soup of 2. Serve the miso soup in bowls with the okra, aosa and sobanome on top.

★ A Note

Yam is less easily browned if soaked in vinegar water.
