Western-style Summer Miso Soup

With coconut milk, this miso soup is full of summer flavor.

Ingredients (4 servings)

Chicken thigh 100 g (boneless)
Onion 1/2
Red bell pepper 1
Basil Several leaves
Coconut milk 100 cc
Dashi stock 700 cc
Miso 3-1/2 tablespoons

  1. Cut the chicken thigh into proper sizes and slice the onion and red bel pepper.
  2. Bring the dashi stock to a boil and add the chicken, onion and red bell pepper. After the ingredients are cooked, add the coconut milk, dissolve the miso and boil for a moment.
  3. Serve the miso soup in bowls with the basil leaves on top.

★ A Note

Instead of basil, you can use cilantro, if you like.
