Edamame and Yam Miso Soup

Enjoy yam (nagaimo), full of dietary fiber, together with green in season.

Ingredients (4 servings)

Edamame 1/2 bunch
Nagaimo 10 cm
Dashi stock 800 cc
Miso 3-1/2 tablespoons

  1. Boil the edamame and take the edamame beans out of the pods. Cut the nagaimo into proper sizes.
  2. Bring the dashi stock to a boil and add the edamame and nagaimo. After the ingredients are cooked, dissolve the miso and boil only for a moment.
  3. Serve the miso soup in bowls.

★ A Note

White nagaimo and green edamame give a vivid contrast to enjoy the miso soup.
