Grated Yam and Somen Noodle Miso Soup

Somen noodles are thin noodles made from flour. Enjoy them with this miso soup. They are refreshing and smoothly go down.

Ingredients (4 servings)

Yam 100 g
Somen noodles 1 bundle
Shiso leaf 1
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Peel the yam and grate. Boil the somen noodles. Shred the shiso leaf thinly.
  2. Bring the dashi stock to a boil, dissolve the miso and boil for a moment.
  3. Place the grated yam and somen in bowls and pour in the miso soup of 2. Serve the miso soup with the shredded shiso leaf on top.

★ A Note

Adding raw eggs and myoga (Japanese ginger) makes this miso soup tastier.
