Grated Yam and Winter Melon Cold Miso Soup

This is a cold miso soup with winter melon (togan) soaked with flavor.

Ingredients (4 servings)

Yamaimo (Japanese yam) 100 g
Togan 100 g
Cucumber 2 cm
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Peel the togan thickly and cut it into proper sizes. Peel the yamaimo and grate it. Slice the cucumber and cut into thin strips.
  2. Bring the dashi stock to a boil and add the togan. After the togan is cooked, dissolve the miso and boil for a moment. Let the miso soup cool down.
  3. Place the grated yamaimo in bowls and pour the miso soup of 2 over it. Serve the miso soup with the cucumber on top.

The season of togan is very short. Enjoy this easy-on-the-body ingredient in this miso soup.
