Rape Blossom, Tofu and Potato Miso Soup

The sweetness of rape blossom (nanohana) and new potato gives a feeling of spring.

Ingredients (4 servings)

Nanohana 50 g
Tofu 1 cake
Potato 1
Dashi stock 800 cc
Miso 3-1/2 tablespoons

  1. Peel and quarter-slice the potato. Boil the nanohana and cut it into proper sizes. Cut the tofu into proper sizes.
  2. Bring the dashi stock to a boil and add the potato. After the potato is cooked, dissolve the miso and add the tofu.
  3. Serve the miso soup in bowls with the nanohana on top.

★ A Note

Nanohana becomes less bitter after it is boiled.
