Flat Fish Cake and Deep-fried Tofu Miso Soup

This is a miso soup of fluffy boiled flat fish cake (hanpen) and juicy deep-fried tofu (aburaage) with vivid and fragrant Japanese honeywort (mitsuba).

Ingredients (4 servings)

Hanpen 1 piece
Mitsuba 4 stalks
Aburaage 1 piece
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Cut the hanpen and aburaage into strips.
  2. Bring the dashi stock to a boil and add the hanpen and aburaage. After the ingredients are cooked, dissolve the miso and boil for a moment.
  3. Serve the miso soup in bowls with the mitsuba on top.

★ A Note

Avoid heating hanpen too much. It would swell and then shrink, losing its fine texture.
